Mozzarella di Bufala
When the recipes for modern pizza were conceived well over a century ago, almost all of them included one, distinct cheese: mozzarella di bufala. To this day the go-to cheese of pizza-making, mozzarella di bufala has a delicate texture to it that, when melted, is incredibly satisfying to eat. The cheese has since been featured on many iterations of pizza, but perhaps most prominently on the Margherita pizza, a beloved and traditional style of pizza that originated from Napoli in Southern Italy and can be seen in countless Italian-inspired eateries across the globe, such as ours here at Strega by Nick Varano!

Ricotta cheese has a light and creamy texture that makes it an ideal choice for various Italian foods like lasagna, ravioli, and cannoli.
